Oatmeal Protein Pancakes

Hi guys! I’ve been a little M.I.A. lately due to working a full time job and going school but here I am!  I haven’t had much time to make my usual creative breakfasts in the morning but this past weekend I made a killer stack of fully deliciousness.  Yup, you guessed it protein pancakes. Here is the recipe…

 

Ingredients

  • 1 egg
  • 1/4 cup unsweetened almond milk
  • 3 tbs oat flour
  • 1/2 scoop of vanilla protein powder
  • 2 tbs coconut flour
  • 1/2 tsp baking powder
  • 2 packets of stevia or 7 drops
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  1. Heat stove to top to med-high heat
  2. Spoon batter onto pan to make approx 3 pancakes
  3. Cook 3 min each side
  4. Serve with peanut butter, bananas, and any syrup of your choice
  5. Enjoy!

Oatmeal Blueberry Protein Pancakes

Ingredients

  • 1/4 cup oat-flour
  • 2 tbs protein powder
  • 1/2 tbs ground flax
  • 2 egg whites
  • 2 tbs non-fat greek yogurt
  • 2 tbs unsweetened almond milk
  • 1/4 tsp baking powder
  • 1 tsp stevia
  • 1/4 cup fresh or frozen blueberries
  1. In a small bowl beat egg whites
  2. Add greek yogurt and almond milk and mix well
  3. Add remaining dry ingredients and mix
  4. Heat a non-stick pan to med-high heat
  5. Add batter and blueberries evenly to the pancakes
  6. Cook for about 3 min on each side
  7. Plate and eat up!

I topped mine with my new favorite raw coconut nectar! Lower in sugar and calories than honey, maple syrup and agave!

Peppermint Mocha Pancakes

  • 2 tbs protein powder (sunwarrior is the best)
  • 2 tbs dark cocoa powder
  • 2 tbs coconut flour
  • 2 egg whites
  • 1/2 cup unsweetened almond milk
  • 1/4 tsp baking powder
  • 1/8 tsp peppermint extract
  • 1 tsp stevia extract
  1. Combine first three ingredients plus baking powder and stevia in small bowl
  2. Add egg whites and milk to separate bowl and mix well
  3. Add wet ingredients to dry and stir well
  4. Heat a non-stick pan to med heat
  5. Add batter to pan and cook 4 min on each side
  6. Plate them up and dig in.

I layered mine with non fat greek yogurt  sweetened with stevia and a drop of peppermint extract.  Perfect breakfast for the holidays! Enjoy 🙂

Peanut Butter Cup Pancakes

  • 2 tbs of vanilla protein powder
  • 2 tbs coconut flour
  • 2 tbs oat flour
  • 2 tbs peanut flour or pb2
  • 1/2 tsp baking powder
  • 2 egg whites
  • 1/3 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp stevia extract
  • chopped peanuts (optional)
  • 1 tbs cocoa powder
  • 1/8 cup sugar free syrup, agave, maple syrup etc
  1. Combine first five ingredients in a small bowl
  2. In separate bowl beat egg whites
  3. Add almond milk to egg whites and beat well
  4. Add wet ingredients to dry and mix
  5. Heat a non-stick pan to medium heat
  6. Coat with cooking spray or coconut oil
  7. Spoon battle onto pan and cook 4 min on each side
  8. Add cocoa powder to syrup, stir and microwave for 30 seconds on high
  9. Plate your pancakes and drizzle with syrup and peanuts

Cake for Breakfast?

Yes I said it…cake for breakfast..sprinkles and all! Most of you who follow me on instragram know I have a strong relationship with my various pancakes that I get creative with a few days out of the week.  These guys are still packed with protein and healthy carbs but the secret ingredient is not the cleanest or healthiest thing out there for you, but hey you only live once.  To give these pancakes a cake batter flavor I added sugar free vanilla pudding mix to the batter but I am on the hunt for butter extract which is a much healthier option that would probably work great.

Ingredients

  • 2 egg whites
  • 1/4 cup unsweetened almond or coconut milk
  • 1/2 scoop vanilla protein powder
  • 2 tbs coconut flour
  • 2 tbs sugar free vanilla pudding mix
  • 1 tsp stevia extract
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder
  • a shake of sprinkles!
  1. Add egg whites, milk and vanilla extract in small bowl and whisk.
  2. Combine remaining dry ingredients in a small bowl.
  3. Add the wet ingredients to dry and mix well.
  4. Heat a non-stick pan to med-high heat.
  5. Cook pancakes about 3 min on each side
  6. Top with greek yogurt or low-fat cottage cheese sweetened with stevia
  7. Shake on a few sprinkes and boom cake for breakfast! 😛

 

Pumpkin Heaven

Pumpkin Paleo Oatmeal

 

 

 

 

 

 

 

 

 

 

Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup coconut  or unsweetened almond milk
  • 2 tbs coconut flour
  • 3 egg whites
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin spice
  • 1 tbs chopped walnuts
  1. In a saucepan toast walnuts for a few minutes on med heat and set aside
  2. Add pumpkin, milk, and flour to a small pot cook over med heat
  3. Stir the mixture very well so the coconut flour incorporates smoothly
  4. Cook for about 1 mintue
  5. Add 3 egg white to the pot and stir until combined
  6. Add vanilla and spices and continue to cook for another 5 min
  7. Top with toasted walnuts, honey, agave, or sweetener or your choice

If your looking for something that reminds you of oatmeal but are trying to limit carbs try this out, you won’t be dissapointed!

 

 

Paleo Pumpkin Pancakes

 

 

 

 

 

 

 

 

 

 

Ingredients

  • 3 egg whites
  • 1/4 cup pureed pumpkin
  • 2 tbs coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin spice
  • 1 tsp stevia extract (not paleo)
  1. Combine egg whites and pumpkin in a small bowl and whisk
  2. Add coconut flour and stir until smooth
  3. Add remaining ingredients
  4. Heat a non-stick pan with cooking spray
  5. Cook on med-high heat for 3min on each side
  6. Top with whatever you like!

I am not paleo but I wanted to try making a cleaner pancake that was lower in carbohydrates. I layered each pancake with non-fat greek yogurt combined with a little pureed pumpkin, spices, and stevia. Not paleo but it tasted amazinggg!

Carrot Cake Pancakes

Ingredients

  • 2 egg whites
  • 3 tbs unsweetened almond milk
  • 1 scoop protein powder (sunwarrior is my favorite)
  • 3 tbs oat flour
  • handful of grated carrot
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • pinch of allspice
  • 1/4 tsp baking powder
  • 1 tsp stevia extract

Cream Cheese Icing

  • 1 1/2 tbs low-fat or fat free cream cheese
  • 2 tbs Walden Farms syrup or any syrup you prefer
  1. Heat a non-stick pan to med/high heat
  2. Combine egg whites and almond milk in a small bowl
  3. Add remaining ingredients and milk well
  4. Spray pan with cooking spray
  5. Pour batter onto pan and cook for about 2-3 min on each side
  6. Heat cream cheese and syrup in a small microwavable dish
  7. Top pancakes with cream cheese icing and some extra carrot and dig in!

I was never a fan of carrot cake but these came out awesome! Great way to start the day on a chilly fall morning.

Lemon Blueberry Protein Pancakes

Ingredients

  • 1 scoop protein powder ( I used sunwarrior vanilla)
  • 2 tbs coconut flour
  • 2 tbs low-fat whipped cottage cheese
  • 1/2 cup unsweetened almond milk
  • 1/2 cup fresh or frozen blueberries
  • 2 egg whites
  • 1 tsp lemon extract
  • 1/2 tsp baking powder
  • grated zest from half a lemon
  • few squeezes of lemon juice
  • 1 tbs stevia

lemon cream filling

  • 3 tbs  low-fat whipped cottage cheese
  • 1/2 tsp stevia
  • squeeze of lemon juice
  1. Add egg whites, almond milk, and cottage cheese to  a bowl and mix well
  2. Add lemon extract, stevia, lemon zest and juice to the wet mixture
  3. Add remaining dry ingredients to a bowl and combine
  4. Add wet ingredients to dry and mix well
  5. Heat a non-stick pan to med/high heat
  6. Pour batter onto pan and add  a 1/4 cup of blueberries evenly to each
  7. Cook for 3-4 min on each side
  8. Combine the 3 tbs cottage cheese, stevia and lemon in a bowl for the filling
  9. Layer each pancake with lemon cream filling
  10. Top with remaining blueberries

These pancakes are the perfect way to end the summer!

Refreshing, delicious, and packed with protein 🙂

Tres Pancakes

Most of you who follow me on Instagram know I have been slacking with posting recipes.. especially my past few breakfast posts which are…pancakes obviously. So here are the three that I have recently come up with that are pretty bomb if you ask me!

 

Banana Chocolate Chip Quinoa Pancakes


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients

  • 3 egg whites
  • 1/4 cup unsweetened vanilla almond milk
  • 1 scoop protein powder
  • 2 tbs quinoa flour
  • 1 ripe banana
  • 1/4 tsp baking powder
  • 1 tsp stevia
  • 1/2 tbs mini dark chocolate chips
  1. Combine egg whites and almond milk in a small bowl and mix well
  2. Mash half of the ripe banana with fork and add to egg white mixture
  3. Combine remaining dry ingredients (not chocolate chips) in a small bowl
  4. Add wet ingredients to dry and mix well
  5. Heat a non-stick pan on med-high heat and coat with cooking spray
  6. Add half of chocolate chips to each pancake
  7. Cook pancakes on each side for about 3min
  8. Remove from pan and top with remaining half of banana and chips

I added some pb2 to mine..which brought everything together and tasted amazing! Obviously you can top these with whatever your little heart desires but I recommend pb2 or all natural peanut butter.

 

 

Pumpkin Protein Pancakes

Ingredients

  • 2 egg whites
  • 2 tbs unsweetened vanilla almond milk
  • 2 tbs pureed pumpkin
  • 1 tbs ground flaxseed
  • 1 scoop protein powder
  • 1/4 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp stevia
  1. Add egg whites, almond milk and pumpkin to a small bowl and mix well
  2. Combine remaining dry ingredients in a small bowl
  3. Add wet ingredients to dry and mix well
  4. Heat a non-stick pan to med-high heat and coat with cooking spray
  5. Cook pancakes on each side for about 3min
  6. Remove from pan and pile on those toppings!

Topped mine with pumpkin seeds, dried cranberries, pecan butter and Walden Farms calorie free syrup. Holy Yum!

 

 

Chocolate Almond Mocha Pancakes

Ingredients

  • 2 egg whites
  • 3 tbs unsweetened vanilla almond milk
  • 2 tbs almond flour
  • 1 scoop protein powder
  • 1 tbs dark cocoa powder
  • 1 tbs ground coffee
  • 1/4 tsp baking powder
  • 1 tsp stevia
  1. Add egg whites and almond milk to small bowl and mix well
  2. Combine remaining dry ingredients in small bowl
  3. Add wet ingredients to dry and mix
  4. Heat non-stick pan to med-high heat and coat with cooking spray
  5. Cook pancakes on each side for about 3min
  6. Remove from pan and plate em up!

My pancakes are filled with “mocha cream” which is extremely easy that I came up with really quick. All it is is 1/4 cup of 1% milk fat whipped cottage cheese with a tablespoon of brewed coffee, 1 tsp of cocoa powder, and a dash of stevia. I topped them off with crushed cocoa roasted almonds and Walden Farms calorie free chocolate syrup. These literally tasted like dessert and heaven! Eating healthy does NOT have to be boring by any means and this proves it!

Green Monsters, Ups & Downs and Macaroons

Monday…is everyone’s favorite day of the week..NOT! Unfortunately I haven’t been feeling 100% due to the fact that my workouts haven’t been as great as they usually are and my eating hasn’t been as clean as it usually is but we all have our ups and downs, good days and bad.  No one is perfect.   Anyways I cannot wait for the new semester to start at school where I will be surrounded by new faces and filling my brain with what I have become so passionate about..nutrition.  It also doesn’t hurt that I will be back in a real gym again!  Pumped!  These past couple weeks I have been communicating with some awesome companies who pride themselves in distributing awesome, healthy food products that I have had the opportunity to sample! Pretty sweet!  I’ve also been playing around with some clean, healthy recipes as usual. So here goes…

 

Green Monster Pancakes

Ingredients

  • 2 tbs coconut flour
  • 2 tbs protein powder
  • 3 egg whites
  • 2 tbs unsweetened almond milk
  • 1/2 tsp stevia
  • 1/4 tsp baking powder
  • handful of spinach or kale
  1. Add all ingredients to a blender and blend for a few seconds
  2. Heat a non-stick pan and coat with cooking spray
  3. Add batter to pan and cook on each side for about 2min
  4. Serve with whatever toppings you prefer & dig in!

I layered and topped these bad boys with homemade blueberry chiaseed jam and crushed cinnamon roasted almonds.

Blueberry Chiaseed Jam

Ingredients

  • 1 cup fresh blueberries
  • 1/4 cup water
  • 2 tbs stevia
  • 1 tbs chiaseeds
  1. Heat blueberries and water in microwave on high for 2 min
  2. Add stevia and chiaseeds and stir well
  3. Let cool for about 10 min
  4. Cover and put in fridge overnight

Simple and perfect for breakfast time!

 

 

Oh so you’re probably wondering where the macaroons come in right? Well an awesome company called Hail Merry sent me a sample of their AMAZING chocolate macaroons! All of their products are made from raw ingredients, vegan and gluten-free.   I can’t say I have ever really had a macaroon before but after trying these I definitely will be indulging in them again.  These macaroons rep many health benefits without being too sweet..two thumbs up! They are hand made with organic shredded coconut, dark cocoa, organic expeller pressed coconut oil, pure maple syrup, organic Mexican vanilla and sea salt.

 

When I opened up this little package I was skeptical of the appearance but I really shouldn’t have because these are nothing less than amazing.  Not too sweet and you can actually taste the ingredients..no artificial garbage here! Perfect  little after lunch or dinner treat.  Most of their products can be found in Whole Foods or local health food stores.
